Meatballs aren’t just for spaghetti anymore.

You are going to love this healthy take on Italian Meatballs. This is a meal idea the family will love. I always like to make triple batch when I take the time to make this little gems since they are perfect to put on the freezer for those supper crazy week when you don’t have time, you know your healthy dinner backup is waiting for you.

Turkey Meatballs

Serving size 5 meatballs

Ingredients

  • 2 lbs of lean ground turkey
  • ½ teaspoon of Himalayan Salt (or sea salt)
  • ½ teaspoon black pepper
  • 1 teaspoon dried oregano
  • ¼ cup unsweetened almond milk
  • 1 medium onion finely chopped
  • 1 teaspoon of paprika (smoked paprika if you have it)
  • 2 large egg,
  • 1/3 cup grain quick cooking oats
  • 2 cloves of garlic, minced
  • 1 tablespoon of dried parsley

Instructions

  1. Preheat the oven to 400 F.

Line a baking sheet with parchment paper or spray with a non-stick cooking spray and set aside.

  1. In a large bowl combine all ingredients mixing well
  2. Place in refrigerator for 1 hour
  3. Roll the mixture into 42 1-inch meatballs and lay on the prepared baking sheet.
  4. Bake of 15-20 minutes at 400F.

Serving Suggestions

  • Serve Italian Meatballs over 1 cup of Zoodles
  • Serve Italian Meatballs over 1 cup whole wheat pasta or quinoa
  • Serve Italian Meatballs in 2 large romaine lettuce leaves
